I'm a lady who loves cheese, sour cream, & ice cream, but I recently became lactose intolerant. My key focus in recreating dairy recipes is taste, but I try to be as health conscious as possible. Some of my recipes are low lactose rather than dairy free. I'm also a writer, teacher, nanny, dog mom, housewife, native Yinzer, current Californian, and social organizer extraordinaire.

Dairy Free Yogurt Pancakes

 

Make your pancakes from now on with coconut oil! It adds a delicious taste that reminds me of festivals and funnel cake.

These pancakes are amazing with soy yogurt. If you can handle greek yogurt and would like to use that, go right ahead. Greek yogurt contains very little lactose. I especially prefer the FAGE brand for taste, texture, and comfort.

If you really want to get fancy add berries,  chocolate chips, or even a fruit syrup swirl.

Ingredients:

1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup Silk Very Vanilla Soymilk
1 egg
1/2 cup soy yogurt, vanilla or honey flavor
Coconut Oil for frying

Directions:

1. In a large bowl, stir together pastry flour, baking soda, and baking powder.

2. In a medium bowl, whisk together egg, soy milk, and soy yogurt. Pour liquid mixture into flour mixture and stir until blended.

3. Heat a nonstick skillet over medium low heat.  Drizzle a spoonful of coconut oil onto the skillet. Ladle batter for each pancake using 1/3 cup measuring cup. Turn the pancake when air bubbles start to pop.

 

Dairy Free Turkey Broccoli Quiche


We had a ton of leftovers from our 23 lb. turkey this Thanksgiving, so I was coming up with ways to eat it for breakfast, lunch, and dinner. A quiche is a great breakfast opportunity to use up leftover turkey, but lactose intolerant and quiche usually don’t go together that well. I replaced the heavy cream and cheese with shredded soy mozzarella, a sprinkle of Parmesan, and, of all things, Silk Nog.

Now, before you go wondering how any of these ingredients can possibly go together, you should know that the result was absolutely divine. My husband and I devoured this entire 9inch quiche in less than two days. You don’t have to use the Nog, which is an eggnog alternative, you can use Lactaid Milk or Lactaid Half and Half (if you can find it), or Almond Milk or Soymilk instead. But if you do see the Silk Nog, give it a try. It has a beautiful blend of spices in it already that tastes great with an egg dish! A perfect Thanksgiving leftovers treat for the person in your family that can’t digest dairy.

Ingredients:

1 refrigerated pie crust
1 1/2 cups fresh broccoli
1 tsp onion powder
Dash of black pepper
1 tablespoon Earth Balance or Smart Balance Light Buttery Spread
1 cup cooked turkey, chopped
3/4 cup shredded soy mozzarella cheese (I use Trader Joe’s)
1 tablespoon of Parmesan Cheese Alternative
4 eggs
1 cup Silk Nog (I also recommend Very Vanilla Soymilk)
1 teaspoon curry powder
1/4 teaspoon black pepper
1/4 teaspoon of sea salt

Directions:

1. Let the pie crust sit out to adjust to room temperature for at least 15 minutes. Mold it into a 9inch pie dish.

2. Melt 1 tablespoon of buttery spread in a large pan and add the broccoli, onion powder, and a dash of black pepper, cooking over medium heat until just tender and it becomes a bright green color.

3. Beat the eggs in a medium bowl, then add 1 cup of Silk Nog, salt, pepper, and curry powder and whisk together until blended.

4. Add the ingredients to the pie in this order: cooked broccoli, chopped turkey, shredded soy mozzarella cheese, Parmesan cheese. Then, pour the egg mixture evenly over these ingredients. Spread the mixture so that all the ingredients are evenly covered.

5. Bake at 375 degrees Fahrenheit for 40 minutes, until the center of the quiche is completely cooked through. Goes well with a steaming cup of pumpkin spice coffee. Happy Black Friday!

Olive and Pimento Cream Cheese Alternative

I really miss cream cheese. I have cravings for it all the time. When I lived in Pittsburgh, PA, one of my favorite places to go for breakfast was Bruegger’s Bagels, where they had a delicious selection of cream cheese to choose from, including strawberry, pumpkin, and, my all-time favorite, olive and pimento.

I used to make my own flavored cream cheese when we first came out to California and had great success with pumpkin, blueberry, and olive pimento, but when dairy started bothering me I stopped. I’ve tried to come up with cream cheese alternatives, first by using creamy goat cheese instead. I mixed it with raspberry preserves to make raspberry cream cheese. It was a great option, until excess goat cheese started bothering me as well.

The cream cheese alternatives were my best options. Nowadays there are multiple brands without harmful ingredients like hydrogenated oils. This is Not a Tub of Cream Cheese This is a Tub of Non-Dairy Spread is the Trader Joe’s brand. Yeah, that is literally what it’s called. This particular cream cheese alternative is made out of coconut oil, sunflower oil, soy protein, and lots of thickeners. It is cholesterol free and also free of hydrogenated oils. The only problem with it is that it tastes nothing like cream cheese. It just looks and spreads like cream cheese. So I went to work to try to make it edible. I figured that adding strong flavor to it would really make a difference, so I mixed in some green olives and the spread became really something to be happy about. I devoured the two halves of my mini bagel with olive pimento spread and needed more. So I made another one. And another. It’s almost like eating cream cheese again! Definitely worth a try. I would love to try pumpkin next.

Ingredients:

1 container This is Not a Tub of Cream Cheese This is a Tub of Non-Dairy Spread
1/2 cup Manzanilla olives stuffed with minced pimentos
1 teaspoon Manzanilla olive juice

Directions:

1. Dice the green olives with pimentos still inside.

2. In a small bowl, thoroughly mix the diced olives with the cream cheese alternative and the olive juice. You can easily add more olives if you want. The more olives added the more it tastes like green olives and the less it tastes of the spread.

3. Spread it on your favorite toasted bagel and enjoy!
