I have the best dog of all time.

After spending hours yesterday creating this amazing soup, I went to store it in the refrigerator and missed the shelf completely, letting go of the container so that it hit the floor and exploded everywhere.

An entire quart of chicken stock and turkey meatballs spilled in growing puddles all over the kitchen floor and all I could do was watch. My neighborhood was stunned into silence at the expletives issuing from my apartment. Even Eric and Mia, who witnessed the whole disaster, had no words.

My chicken loving Chihuahua stood there in shock, as the scent of warm chicken stock filled the air. Even minutes later, once all the shock was past, I was in tears, and Eric began consoling, Mia continued to stand there, just watching, being the best dog that there ever was.

It’s possible she could sense how sad her mommy was (though I doubt it). The more likely reason was the training we’ve just started helped her “stay” for the treat until she was given the command. Though, there was definitely some confusion and intuition there. I imagine what was going on in her little brain was something like: “Mom just went crazy over this chicken stuff, she’s really stressed out and I want to please her by being a good girl. I’m going to stay and then she’ll give me chicken.” She was so good that after I cleaned up the bulk of the mess, she got to clean up the rest.

Honestly this was one of my worst food fails ever. I could care less about spilt milk–I made each and every single one of those tiny turkey meatballs by hand. I drove to the store for the sole purpose of buying little star shaped noodles. And it was about 80 degrees in my kitchen.

It was such a stupid clumsy accident that I can really only blame it on the fact I had changed into my glasses very early this particular evening, as I was having irritation in one of my eyes. My glasses are a whole prescription higher than my contacts and I can’t see out of them nearly as well. I’ve been putting off buying new lenses for two years and I really need to get new ones. This was the last straw.

Poor mom. Poor meatball soup. It really was delicious! At least I was able to take a few pictures before it went on the floor. I even enjoyed a couple small bowls. I will definitely make it again, and I hope someone else will, too!

For the Meatballs
  1. 1/4 lb ground turkey
  2. 1 egg
  3. 1/3 cup breadcrumbs
  4. 1/3 cup parmesan cheese (or nondairy alternative)
  5. 1/8 cup fresh parsley, finely chopped
  6. 1/8 teaspoon black pepper
  7. 1/8 teaspoon sea salt
  8. 1/8 teaspoon Italian seasoning
For the Soup
  1. 2 cups unsalted chicken stock
  2. 1/2 yellow onion, finely chopped
  3. 1 carrot, finely chopped
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon sea salt
  6. 1/4 teaspoon black pepper
  7. 1 cup fresh baby spinach, packed
  8. 1/4 cup tiny uncooked noodles
  9. fresh parsley, coarsely chopped
Instructions
  1. To make the meatballs, combine turkey, egg, breadcrumbs, parmesan cheese, parsley, salt and pepper, and Italian seasoning in a small bowl. Mix with your hands until all ingredients are well blended.
  2. Preheat the oven to 350 degrees Fahrenheit and spray a medium size casserole dish with cooking oil. Using a tablespoon to scoop, shape mixture into bite size mini meatballs and place in casserole dish. They can be close together but not touching. Cook for 15 minutes.
  3. While meatballs are cooking, prepare your broth in the crock pot. Add chicken stock, onion, carrot, garlic powder, and salt and pepper. Save the greens and noodles for later.
  4. When the meatballs are done, add them to the chicken broth in the crock pot. Cook on high for two-three hours. During the last 10-15 minutes of cooking, add noodles and stir. Set a kitchen timer to help. When there are three minutes left, add the spinach and stir. Once the timer goes off, remove from heat. Serve topped with parmesan cheese and parsley. Don't spill.

Dairy Free Turkey Taco Pie

Eric and I love turkey tacos. We use a great recipe from the bottle of Frank’s Red Hot Cayenne Pepper Sauce. It’s our go-to meal and we have it about once every two weeks because it’s so easy, incorporates all food groups in one dish, it’s healthy, and it’s the perfect comfort food. Turkey tacos are so easy because you can store all the ingredients in your kitchen without having to stop by the store to pick anything up. I keep ground turkey at the ready in the freezer, canned black beans and diced tomatoes in the pantry cupboard, buy rice in bulk, and store jarred salsa and Frank’s in the fridge. It’s a meal I don’t have to plan, I just get out all the ingredients.

The basic Frank’s taco recipe calls for 1 lb. cooked ground meat, 1 cup salsa, 1/4 cup Frank’s Red Hot Sauce, and 2 teaspoons of chili powder. We build on the recipe and add diced tomatoes, then layer our tacos with black beans and brown rice. Occasionally Eric adds shredded cheese while I add guacamole if it’s in the fridge. Sometimes we don’t always have tortilla shells, and we will either eat it burrito bowl style like Chipotle, or eat with tortilla chips. I usually have some Tostitos Lime Tortilla chips on hand.

One week not too long ago I didn’t have any chips or tortilla shells, but I did have fresh tomatoes, romaine lettuce, cheddar cheese shreds, and even guacamole. All the ingredients perfect for tacos! Rather than go to the store just for taco shells, I pulled out the cornmeal I use for dusting pizza crust and made a delicious Taco Pie. It’s so good and looks beautiful when it’s all put together. You don’t need sour cream or cheese to make this delicious. Add a dollop of guac to your pie when serving to get that creaminess you desire.

Ingredients:

Crust

1/4 cup cornmeal
3/4 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon sea salt
1/3 cup almond milk
1 tablespoon vegetable oil
cooking spray

Filling

1 lb. ground turkey breast
1 cup salsa
1-2 tablespoons hot sauce
2 teaspoons chili powder
1 can black beans, drained (not rinsed)
1 cup three cheese soy cheese shreds or mixture of mozarella and cheddar Daiya Shreds
red pepper flakes (optional)
1 can diced tomatoes, drained
1 cup lettuce, shredded
Gaucamole or advacado (optional)

Directions:

1. Preheat oven to 450 degrees Fahrenheit. Spray a 9 inch pie dish with cooking spray then sprinkle a light dusting of cornmeal on bottom and sides of dish to prevent crust from sticking.
                                           

2. In a medium bowl, combine cornmeal, flour, baking powder, and salt. Stir in almond milk and vegetable oil until a ball begins to form.

                                                

3. Use your hands to knead the dough into a ball, then, on a surface dusted with flour, use a rolling pin to roll out your dough into a 10 inch circle.

                                            

4. Place your rolled out dough onto the pie dish, molding to form a crust. Tuck extra dough underneath to make even. Poke a few fine holes in the bottom and sides with a fork to prevent crust from bubbling up.

                                                 

5. Place in oven and cook for five minutes, or until lightly browned and hardened like a tortilla shell.

6. Meanwhile, cook your ground turkey until browned. Drain any liquid fromt the pan, then add salsa, hot sauce, and chili powder. Simmer uncovered for ten minutes, allowing the tortilla crust to cool and the spices to seep into the turkey.

7. Add turkey and salsa mixture into tortilla crust. Follow with a thick layer of black beans, then top with cheddar cheese shreds. Sprinkle with red pepper flakes for an added kick.

8. Bake for 8 minutes, or until cheese is melted and crust is golden brown. Remove pie from oven and immediately top with diced tomatoes and lettuce. Cut like a pie and serve with guacamole.

   

Thanksgiving Leftovers Casserole

Here’s an easy, dairy free way to use up leftover Thanksgiving mashed potatoes, gravy, turkey, and vegetables. If you used the recipe for Dairy Free, Fat Free Mashed Potatoes, you’re already set to make this recipe dairy free.

Reheat your leftover mashed potatoes using a few splashes of vegetable broth or chicken broth at a time, microwaving in 1 minute intervals, then mashing with a fork until soft again and easy to spread.

My gravy was just turkey drippings thickened with cornstarch, but it solidifies when refrigerated  so I microwaved about a cup of this until liquified again.

I used green beans and carrots in this recipe, but you can use any leftover vegetables, especially peas, corn, carrots, and green beans. If they are large just chop them up before adding them to the dish.

The measurements can be adjusted depending on how much leftovers you have. Just judge it as 1 part turkey, 1 part gravy, 2 parts vegetables, and 3 parts mashed potatoes. I added the paprika mostly for color, and the thyme to flavor the vegetables which were not cooked. If your vegetables are already flavored, you may not need any spices, salt, or pepper. It’s like a Thanksgiving version of Shepherd’s pie!

Ingredients:

1 cup cooked turkey, chopped
2 cups mixed vegetables
1/2 cup-1 cup turkey gravy
3 cups mashed potatoes or more
1/4 tsp paprika (optional)
1/4 tsp thyme (optional)
sea salt and black pepper to taste

Directions:

1. Reheat your mashed potatoes and gravy until potatoes are soft to spread and gravy can be poured. Add chopped turkey, vegetables, salt, pepper, and thyme to a deep 8×8 casserole dish and mix together.

2. Pour half the gravy into the vegetables and mix. Then pour remaining gravy to fill in the space until turkey and vegetables are just covered.

3. Dollop mashed potatoes on top of the gravy mixture, and spread until fully covered and flat. The thickness of the mashed potatoes really depends on how much you want to use, and how deep your dish is. Once spread until smooth, you want to fluff the potatoes so that the tops get a little crispy in the oven. You can use a fork to rough it up or make a pretty design by carving into the smooth potato surface. Sprinkle with paprika.

4. Bake for 25 minutes at 350 degrees Fahrenheit or until hot. Set the oven to broil, and broil for 3 minutes or until the tips of the potatoes get a little bit browned. Allow to cool for a few minutes and then serve.

For dessert, leftover cranberry sauce mixed with cool whip–yum!
