Dairy Free Mac’n’Cheese

Cheese lovers: do you think your body really enjoys all that grease, cholesterol, and hard to digest lactose? Of course not! I know it tastes amazing, but so does my lactose free mac’n’cheese.

Well, I didn’t actually use macaroni, but I did use hearty whole wheat penne! Unsweetened almond milk brings this dish to life, along with vegan butter and lactose-free cheese. It has a couple of secret ingredients that you would never have guessed: egg and dry mustard. Topped off with flavorful french fried onions! It will make you wonder if this isn’t the real thing. How can I ever miss mac’n’cheese again?

I can recommend a few lactose-free cheeses to choose from. Trader Joe’s has a shredded soy cheese that’s a blend of mozzarella, cheddar, and jack flavors. I used that for this dish. It’s not vegan and has milk protein in it, so beware if you are allergic to milk protein. It’s great if you are just lactose intolerant. If you are looking for dairy-free, soy-free, and vegan, then I recommend using Daiya Shreds in cheddar.

Parmesan is an aged cheese and has very little lactose. If you can tolerate this, use the real thing. If not, I recommend a product called Parma!, or use nutritional yeast instead. GO Veggie also makes a soy-based parmesan topping.

Follow the directions according to pictures or scroll to the bottom for an easy to follow printable recipe.

What you need:
1 pound pasta 
1 egg
4 tablespoons vegan butter
1/4 cup all purpose flour
2 1/2 cups unsweetened almond milk
2 teaspoons dry mustard
2 cups shredded cheddar cheese alternative
1/3 cup parmesan cheese alternative
1 teaspoon sea salt
1 teaspoon black pepper

Topping:
2 tablespoons parmesan cheese alternative
1/2 cup to 1 cup french fried onions, alternatively you can use breadcrumbs

Directions:
Cook pasta until firm but not done. Knock off about 2 minutes of cook time. Drain and keep in warm, covered pot.

Preheat oven to 350 degrees Fahrenheit. 

Beat egg in small bowl and set aside.

Melt vegan butter  in a large pot over medium heat. Add flour, whisking constantly. Cook for 2-3 minutes. 

Pour in almond milk. Add mustard and whisk until smooth. Cook for 5 minutes or until thickened.

To temper egg, slowly pour 1/4 cup of the almond milk sauce into beaten egg, whisking constantly to avoid cooking the egg.

Slowly pour egg mixture into sauce, whisking until smooth. This will create a nice, thick mac’n’cheese.

Add lactose free cheese and 1/3 cup of parmesan alternative, stir until melted.

 
  

Mmm creamy, cheesy goodness.

Add sea salt and pepper plus more to taste. You can also add any other spices at this point.

Pour cooked pasta into sauce and stir to combine.

In a large casserole dish sprayed with cooking oil, add pasta and cheese mixture.

Top with french fried onions and 2 tablespoons of parmesan cheese alternative.

Bake 5-10 minutes or until the surface is lightly browned. Taste approved by cheese lovers!

  7. Slowly pour egg and almond milk mixture into sauce, whisking until smooth. This will create a nice, thick mac'n'cheese.
  8. Add dairy-free cheese and 1/3 cup of parmesan alternative, stir until melted.
  9. Add sea salt and pepper plus more to taste. You can also add any other desired spices at this point.
  10. Pour cooked pasta into sauce and stir to combine.
  11. In a large casserole dish sprayed with cooking oil, add pasta and cheese mixture.
  12. Top with french fried onions and 2 tablespoons of parmesan cheese alternative.
  13. Bake 10 minutes or until the surface is lightly browned. Taste approved by cheese lovers!
Notes
  1. *I used whole wheat penne, but macaroni works of course! I also recommend Tinkyada's gluten-free brown rice elbows.
  2. **I used Smart Balance Light.

Dairy Free Tomato Basil Skillet Eggs

Here’s a dairy free healthy breakfast for two! I found this recipe in a magazine and adapted it to be dairy free. I made it with tomatoes, basil, and parsley from my garden. You can make this recipe even healthier by using just egg whites instead of whole eggs. Eliminate the toast to keep it gluten free or use a gluten free bread. Yummy!

Ingredients:

6-8 roma tomatoes, seeded and chopped
1/2 yellow onion, chopped
2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper
4 large eggs
1/4-1/2 cup dairy free shredded mozzarella such as Trader Joe’s Soy Mozzarella or Daiya Shreds, according to preference
8 fresh basil leaves, chopped
15-20 fresh parsley leaves, chopped
1 tablespoon fresh chives, diced or 1 tsp dried chives

Directions:

1. Heat olive oil in a medium non stick pan over medium heat. Add onion with half of the sea salt and pepper (1/4 tsp each) and cook for 5 minutes.

2. Add tomatoes and the rest of the sea salt and pepper to the onion, stirring to combine. Cook for 5 to 7 minutes, stirring occasionally.

3. Use a spoon to make four even wells in the onion/tomato mixture and crack an egg into each. Cover pan and cook for 2 minutes.

4. Sprinkle with dairy free cheese then cover again and cook for 1 minute. Remove cover and add chopped basil, parsley, and chives. Serve immediately alone or on top of toasted bread. Enjoy the day!

             

Buffalo Chicken Pizza with Soy and Goat Cheese

Here is one of our favorite things to make for dinner. It’s perfect for the person in your family who is lactose intolerant. You can make one side of the pizza with soy cheese, and one side with regular cheese. It works perfectly for me and my husband, and I get my pizza fix without worry. I even get to satisfy my cheese cravings by adding a sprinkle of goat cheese crumbles.

Goat cheese has less lactose than regular cheese. It bothers me in excessive amounts, but just adding a tiny sprinkle enhances the buffalo chicken and cheese flavor. If you can’t do any goat cheese, then eliminate it altogether, or just add it to your significant other’s side of the pizza. But it is a good alternative for people who have mild lactose intolerance. You can also try adding Parmesan cheese on top of the soy cheese to give it a more authentic cheese flavor. Hard, aged cheeses lose most of their lactose in the aging process. That means small amounts shouldn’t bother someone with lactose intolerance.

There are lots of cheese alternatives out there. My favorites are Trader Joe’s Soy Mozzarella and Daiya Mozzarella Style Shreds. I have only been able to find Daiya items at Whole Foods and Costco. Daiya cheese alternative is also gluten and soy free, so it’s perfect for people with multiple allergies. I don’t usually eat a cheese alternative by itself, but when combined with other ingredients soy cheese blends in just like the real thing.

Ingredients:

1 bag premixed pizza dough (We like Trader Joe’s Garlic and Herb dough)
Trader Joe’s Soy Mozarella Cheese, shredded to desired amount
1/4 cup goat cheese crumbles
1 12 ounce can white chicken, drained of liquid
1/4 cup Franks Buffalo Sauce
2 tablespoons Franks Buffalo Sauce
1/2 cup tomato basil marinara sauce
Flour for rolling dough
Course grind cornmeal (if using a pizza stone)

Directions:

1. If the pizza dough is refrigerated, let sit for 20 minutes before rolling.

2. Preheat the oven to 500 degrees Fahrenheit.

3. For the crispy on the outside, soft on the inside pizza, use a pizza stone. Heat in the oven for ten minutes before placing the pizza on it. You can also use a regular non-stick pan, just make a square shaped pizza. If you have a large flat cookie sheet, you can make a circular pizza on this. Or, if you have it, use a circular pizza pan.

3. In a small pan, combine the chicken and 1/4 cup of Buffalo Sauce. Cook until heated and the sauce is absorbed into the chicken.

4. On a clean surface, sprinkle a thin layer of flour. Roll out the pizza dough with a nonstick rolling pin, adding more flour as needed.

5. Remove the pizza stone from the oven and sprinkle with course grind cornmeal. Don’t use flour–it will only burn and your pizza will stick. Place the rolled dough on the pizza stone, rolling up the edges to make a crust if you desire, and cook in the oven for three to four minutes.

6. Remove the cooked pizza crust from the oven and get ready to put on your toppings.

7. Spread the tomato basil marinara sauce on the pizza evenly. Using too much sauce will make the pizza soggy and hard to cut, but some people like their sauce, like me.

8. Sprinkle on your desired amount of soy mozzarella cheese.

9. Next, add the Buffalo Chicken in an even layer, topping with a sprinkle of crumbled goat cheese.

10. For the last topping, drizzle the 2 tablespoons of Buffalo Sauce all over the pizza.

11. Place in the oven and cook for 6-8 minutes, or until desired crispiness. Thoroughly enjoy.
